Winemaking

At the winery, our grapes are destemmed and carefully hand-sorted twice to make sure only the best berries make it into our wine. The grapes are then lightly crushed and placed in temperature-controlled stainless steel tanks for fermentation and maceration.

Because of the unique character of each varietal and vineyard, we separately vinify and age each lot separately, preserving their characteristics for evaluation and blending after maturation. While this process can be painstaking, it is critical in that it providing us the flexibility to make the best final blends each year using the absolute best component wines we have available.
